Healthy Salad
Ingredients
Purple cabbage 1/2
Cucumber 2-3
Capsicum Red/yellow/green ½
Cherry tomatoes 2-3
Lemon juice 2 tbsp.
Apple 1-2
Carrot 1-2
Onion 1
Salad leaves handful
Mint leaves 2 Tbsp.
Chickpeas 1 cup (boiled)
Fruits or vegetables of your choice can be added
- Dressing:
Olive oil ½ cup
Lemon juice ¼ cup
Dijon Mustard 1 Tbsp.
Garlic ½ Tsp
Salt To taste
Black pepper 1 Tsp
Honey 1 tsp
Directions
- Mix all ingredients in a bottle. Salad dressing is ready.
- Cut all vegetables and fruits in cubes (you can add fruits and vegetables of your own choice). Mix them in a large bowl. Sprinkle lemon juice.
- Add Salad dressing.
- Mix well and serve.
